Curry Chicken Salad
Mix together:
3C cooked, chopped chicken
1/2C chopped walnuts
1/2C chopped, dried apricots
1/4C mayo
1T curry powder
1T lemon juice
1t salt
Add last:
fresh cilantro or parsley, chopped
This wonderful salad can be made with white or dark meat, chicken or turkey. I like to use the ‘pickings’ after I cook a whole bird, and then boil what’s left to make bone broth.
